1 cup besan, 1/4 cup rice flour, 1/4 teaspoon baking soda, A pinch of yellow food color, 1/4 cup water (or as needed to make a smooth batter).
In a bowl, combine besan, rice flour, baking soda, then gradually add water to form a smooth batter, and add yellow food colour.
In a pan, dissolve sugar in water, boil for 5-7 minutes to reach a single-thread consistency, then add cardamom, saffron, and set aside.
Heat ghee in a pan, use a boondi maker to drop the batter into the hot oil, fry until golden, immediately soak them in warm sugar syrup for a few seconds.
Ensure the batter has the right consistency, fry on medium heat for softness, use a strainer if you don't have a boondi maker.
Grease your palms with ghee and gently shape the soaked boondi into small, round laddoos.
Garnish the laddoos with chopped cashews, almonds, and raisins on top. Laddoos are now ready to serve.
