Pressure cook 3 medium potatoes with salt, then drain and mash.
Saute onions in oil until translucent, then add ginger, garlic, and green chilli.
Mix in spices, then combine with the mashed potatoes and chopped coriander, cool the filling.
Prepare a besan batter with water, baking soda, and salt.
Deep fry coated potato patties until golden brown and crisp.
Serve aloo chop with chutney or dip of choice.
