1 cup split yellow moong dal (soaked for 1-2 hours), 1/2 cups all-purpose flour, 2 tbsp ghee, 1/2 tsp cumin seeds, 1/2 tsp asafoetida (hing), 1 tsp ginger, 1/2 tsp garam masala, salt to taste, water (for kneading dough).
Cook the soaked moong dal until soft, then saute with cumin, asafoetida, ginger, garam masala, and salt, and let it cool.
In a bowl, combine flour, ghee, and salt. Add water to form a soft dough. Cover and set aside for 15 minutes.
Roll the dough into balls, flatten them, add the dal filling, seal, and shape into round kachoris.
Heat oil in a pan for frying on medium heat. Carefully fry the kachoris in hot oil, turning them to cook evenly until golden brown and crispy.
Drain the excess oil on paper towels. Serve hot with chutney!
