Mixed vegetables (carrots, peas, corn, beans), potatoes, ghee or oil, cumin seeds, onion, tomato, ginger-garlic paste, garam masala, turmeric.
Heat ghee/oil in a pan. Add cumin seeds, then sauté onions, ginger-garlic paste, and tomatoes. Add mixed veggies and spices.
Boil potatoes until soft. Mash with salt and a dollop of butter for creaminess.
In a baking dish, layer the spiced veggie mixture at the bottom. Top with the creamy mashed potatoes.
Bake at 180°C (350°F) for 20 minutes, until golden and crispy on top.
