Zainab Khanam
- 1 cup basmati rice - 1 cup coconut milk - 1 ½ cups water - 1 onion, sliced - Veggies of your choice - 1 tablespoon ginger-garlic paste - Whole spices (cinnamon, cardamom, cloves) - 1 tablespoon ghee or oil - Salt to taste
Rinse basmati rice thoroughly and soak it for 15 minutes. Drain it well.
In a pan, heat ghee or oil. Add whole spices, sliced onions, and ginger-garlic paste. Sauté until golden and fragrant. Add veggies.
Pour in coconut milk and water, then bring the mixture to a boil. Add salt to taste.
Add the soaked rice to the boiling liquid, reduce heat, and cook covered for 15-20 minutes until the rice is tender and fluffy.
Once done, fluff the rice with a fork. Garnish with fresh coriander and serve hot.
