Sauté the onion & carrot, then add the garlic & tomato paste at the end.
Add Bell pepper to the pot. Stir for a few minutes, letting them soften and release their natural sweetness.
Add cumin powder, and season with salt black pepper and mix well.
Once the bell peppers are tender, remove the soup from the heat. Using an immersion blender, blend the soup until smooth and creamy.
For a creamy texture, Add coconut milk.
Garnish with fresh herbs, and serve hot.
