In a bowl, mix buckwheat flour with rock salt and gradually add water to form a smooth batter without lumps.
Heat a non-stick pan or tawa over medium flame and sprinkle some water to check if it’s hot enough.
Pour a ladleful of batter onto the pan and spread it in circular motions to form a thin dosa.
Drizzle ghee or oil around the edges and on top of the dosa.
Cook until the bottom turns golden brown, then flip it over and cook for another minute.
Place some filling in the center of the dosa, fold it, and remove from the pan.
Serve hot with your favorite chutney or yogurt.
