Zainab Khanam
- 1 cup basmati rice (cooked) , 3 ripe tomatoes (chopped) , 1 onion (sliced) ,2 green chilies (slit) , 1 tsp ginger-garlic paste, 1/2 tsp mustard seeds, 1/2 tsp cumin seeds , Curry leaves, 1 tsp red chili powder, 1/2 tsp turmeric powder, Salt to taste, 2 tbsp oil , Fresh coriander leaves for garnish
Heat oil in a pan, add mustard seeds, cumin seeds, curry leaves, and green chilies. Let them crackle.
Add sliced onions and sauté until golden brown. Stir in the ginger-garlic paste and cook until the raw smell disappears.
Add the chopped tomatoes, turmeric, red chili powder, and salt. Cook until the tomatoes are soft and mushy.
Gently fold in the cooked rice. Stir well to combine with the tomato mixture.
Top with fresh coriander leaves and serve your delicious Tomato Rice with yogurt or pickle!
