In a pan, add the chopped veggies ike carrots, onion, curry leaves, coriander leaves, ginger-garlic, chilies, grated coconut, cumin seeds.
Add 1.5 cups of rice flour and salt to taste. Mix well. Add water in parts to the mixture, mix and knead until a dough forms.
Knead into a soft dough.
Rinse a plantain leaf well using water. Grease it lightly with oil. Roll a handful of the rice dough into a ball and place it on the banana leaf.
Use your palms to flatten the dough into an even roti. Press some holes into the dough with your fingers.
When the base gets light golden and crisp flip the akki rotti. Cook this second side for a light golden and crispy akki roti.
Remove and serve akki roti with coconut chutney.
