– 1 1/2 cups all-purpose flour – 1/2 cup cocoa powder – 1 cup sugar – 1 tsp baking powder – 1/2 tsp baking soda – 1/2 cup melted butter or vegetable oil – 1 cup milk – 2 large eggs – 1 tsp vanilla extract – For filling and topping: 2 cups whipped cream, 1 cup cherries (fresh or canned), chocolate shavings
In a mixing bowl, combine flour, cocoa powder, sugar, baking powder, and baking soda. Mix well, then add melted butter, milk, eggs, and vanilla. Stir until smooth.
Pour batter into greased cake pans and bake at 350°F (175°C) for 30-35 minutes, or until a toothpick inserted comes out clean. Let the cake layers cool completely.
Pit and chop cherries if using fresh ones. If using canned cherries, drain and pat dry. Save a few whole cherries for garnish!
Place one layer of cake on a plate, spread a layer of whipped cream, and add chopped cherries. Repeat with additional layers, then cover the top and sides with more whipped cream.
Decorate with chocolate shavings, whole cherries, and extra whipped cream. Refrigerate for at least 1 hour before serving for best flavor.
