– 4 large eggs – ½ cup granulated sugar – ½ cup all-purpose flour – 2 tablespoons cocoa powder – 1 teaspoon baking powder – 1 teaspoon vanilla extract – Pinch of salt – Chocolate ganache or whipped cream for filling – Powdered sugar or chocolate glaze for decoration
Beat eggs and sugar until pale and fluffy. Sift together flour, cocoa powder, baking powder, and salt. Gently fold into the egg mixture with vanilla extract.
Spread the batter evenly on a parchment-lined baking tray. Bake at 375°F (190°C) for 10-12 minutes, or until springy to touch.
Turn the cake onto a clean kitchen towel dusted with powdered sugar. Peel off the parchment paper, roll with the towel, and let it cool completely.
Unroll the cooled sponge, spread a layer of chocolate ganache or whipped cream, and carefully roll it back tightly.
