Saute onion, celery, and garlic in butter, toss with cubed bread, herbs, and stock, then mix in parsley and cool before stuffing.

Preheat the oven to 375°F, season the chicken with oil and spices, stuff with herb stuffing.

Whisk honey, soy sauce, Dijon mustard, and garlic in a bowl.

Make The Honey Glaze

Place the chicken in a pan and brush it evenly with honey glaze.

Coat The Chicken

Roast for 1.5 hours at 375°F, coat with honey glaze every 20 minutes until golden.

Roast The Chicken

Turn off the oven, remove the chicken and let it rest for 10–15 minutes.

Turn Off The Oven

Garnish with rosemary or coriander leaves and serve hot.
