Herb Butter Roast Chicken: A Juicy Meal For Any Occasion

Preheat oven to 200°C and layer a baking pan with onion slices. 

Mix herb butter and rub half under the chicken skin, spreading evenly. 

Stuff the chicken cavity with onions, lemons, and garlic, then spread remaining butter on top. 

Tie the legs, surround with potatoes, and bake for 1 hour 30 minutes. 

Base the chicken with pan juices twice during cooking. 

Rest for 20 minutes, slice, and serve.
