Add turmeric, cumin, garam masala (optional), coriander, potatoes, carrots, green beans, cauliflower, and peas.
Heat oil in a pot, then sauté onion, garlic, and ginger until the onion is soft and translucent, about 5-7 minutes.
Add turmeric, cumin, coriander, and garam masala (if using), and stir to coat the onions with the spices.
Add the potatoes, carrots, green beans, cauliflower, and peas, and mix the vegetables well with the spices.
Pour in the vegetable in water and bring to a boil. Lower the heat and let it simmer for 20-25 minutes, or until the vegetables are soft.
Use coconut milk for a creamy consistency. Season with salt and pepper to taste.
Garnish with fresh coriander leaves and serve. Add a squeeze of lemon juice for extra flavour.
