Peanut butter, sugar, egg, vanilla extract, flour, baking soda, and a pinch of salt, butter.
In a large bowl, combine peanut butter and sugar. Stir until smooth and well-combined.
Add the egg and vanilla extract to the peanut butter mixture. Stir until smooth.
Sift the flour, baking soda, and a pinch of salt into the wet ingredients. Mix until a dough forms.
Scoop tablespoon-sized balls of dough and place them on a baking sheet lined with parchment paper.
Use a fork to gently press down each ball, making a criss-cross pattern on top.
Bake at 350°F (175°C) for 8-10 minutes or until the edges are golden brown.
