Rolled oats, vanilla extract, cinnamon, almond flour, honey or maple syrup, pinch of salt & powdered sugar .
n a mixing bowl whisk together oats, flour, baking soda, salt, cinnamon, nutmeg and ginger (if using) for 30 seconds. Set aside.
Add 1 egg, 1 tbsp lemon juice, and zest of 1 lemon.
Scoop dough onto a baking sheet, shaping into small balls.
Let cool on baking sheet for a few minutes then transfer to a wire rack to cool completely. Repeat baking process with remaining cookies.
Bake at 350°F (175°C) for 10-12 minutes, then let cool.
