200g chopped prawns, 1 cup chopped spinach, 2 minced garlic cloves, 1 tbsp olive oil, salt & pepper to taste.

½ tsp paprika, 2 large chicken breasts, 2 tbsp olive oil (divided), toothpicks or kitchen twine.

Sauté garlic in olive oil, add prawns and spinach, and cook for 3–4 mins until prawns are pink and spinach is wilted.

Cut a pocket in each chicken breast, stuff with prawn-spinach mix, and secure with toothpicks.

Sear stuffed chicken in olive oil for 2 mins per side, then bake at 180°C (350°F) for 20 mins.
