Using a fork, mix the oats, whole wheat flour, sugar, butter, pinch of salt, and cinnamon in a small bowl until crumbles form.
In a large bowl, add the flour, oats, sugar, cinnamon, cloves, baking powder, baking soda, and salt. Stir everything together.
Whisk oil, eggs, molasses, applesauce, vanilla, and ginger together in a medium bowl.
Add diced apples and walnuts and mix. Add the wet ingredients to the flour mixture and gently mix until just combined.
Scoop the batter into a greased muffin tin, filling nearly to the top. Sprinkle crumble on each muffin.
Bake at 400°F for 5 minutes. Muffins are ready when a toothpick comes out clean or the inside reaches 205°F.
