Cut broccoli into florets and thumb-sized stem pieces, discarding the main stem.
Combine broccoli, other ingredients, and bring to a boil, then simmer for 8-10 minutes.
Add milk, bring to a boil again, and remove from heat.
Blend with a hand blender until smooth, thicken by simmering longer if needed.
Season with salt and pepper to taste.
Make croutons by baking cubed stale bread, then top soup with croutons.
