- 2 cups cooked chicken, shredded - 1 ½ cups cooked rice - ½ cup diced cucumbers, tomatoes, and bell peppers - ¼ cup chopped onions - 2 tbsp olive oil - Salt, pepper, lemon juice, and herbs for seasoning
Chop all the vegetables and shred the cooked chicken. Set aside.
In a large bowl, add the cooked rice, chicken, and chopped vegetables.
Mix olive oil, lemon juice, salt, and pepper. Pour over the salad.
Toss everything together, garnish with herbs like cilantro or parsley, and serve chilled or at room temperature!
