Lightly cook fresh spinach in olive oil with garlic until wilted, then season with salt and pepper.
Toast whole grain or multigrain bread slices until crispy.
Spread a light layer of cottage cheese, or low-fat cream cheese on the toasted bread.
Place the sautéed spinach evenly on top of the cheese layer.
Sprinkle shredded mozzarella or feta cheese on top for extra flavor.
Grill or bake the toast in the oven for 2-3 minutes until the cheese is melted and golden.
