– 1 cup quinoa – 1 cucumber (chopped) – 1 tomato (diced) – 1/2 cup corn – 1/4 cup olive oil – 2 tbsp lemon juice – Salt and pepper to taste – Fresh herbs (optional)
Rinse quinoa and cook it with 2 cups of water. Bring it to a boil, then simmer for 15 minutes. Let it cool.
In a large bowl, combine cucumber, tomato, and corn.
Add the cooked quinoa to the veggies. Drizzle with olive oil, lemon juice, salt, and pepper. Toss well.
Garnish with fresh herbs, if desired. Serve chilled or at room temperature for a refreshing and nutritious meal.
