Thinly slice eggplant lengthwise using a peeler or mandoline.
Heat a pan with oil and cook eggplant slices for 1-2 minutes on each side, seasoning with salt and pepper.
Transfer cooked eggplant slices to a plate.
Prepare the filling vegetables by thinly slicing them.
Place a slice of eggplant on a flat surface, add vegetables, and roll up tightly.
Repeat until all eggplant slices are used.
