Mix salt, sesame seeds, pepper, and sesame oil, mix soy sauce, vinegar, honey, onion, and jalapeno.
Rinse hens, remove giblets, rub with salt, and pat dry.
Stuff with rice, ginseng, jujube, and garlic, adding leftover rice to the pot.
Boil hens in water for 30 minutes, then simmer for 40 minutes.
Ladle broth over hens and add water if needed.
Serve hens in bowls with broth, garnish, and side sauces.
