2 bitter gourds, 1 onion, 1 tomato, 1 tbsp tamarind, 1 tbsp jaggery, 2 tbsp oil, spices, salt, coriander.
Wash and peel the bitter gourds. Slice them thinly and apply a pinch of salt. Let them sit for 15 minutes to remove bitterness.
Heat oil, add mustard seeds, cumin, and red chilies. When they splutter, sauté onions until golden.
Add sliced bitter gourd, turmeric, red chili powder, and salt. Cook for 5-7 minutes until soft.
Add tamarind, jaggery, and tomatoes. Cook until tomatoes soften and flavors blend.
