Slice leeks and rinse them. Heat oil in a big pot. Add leeks, onions, and garlic. Cook until soft and fragrant, about 12-15 minutes.
Add water, 1 tsp sea salt, & 1/2 tsp freshly ground pepper, & bring to a gentle boil over medium-high heat.
Sweet peas added, simmer until cooked but still vibrant green, about 3 minutes.
Blend the soup with an immersion blender until smooth. Taste and add salt and lemon as needed.
Add a little and taste and adjust. The sour cream adds tangy richness!
