Separate egg yolks and whites, whisk egg whites until frothy.
Whisk egg yolks, sugar, ricotta, milk, and vanilla, then add flour, baking powder, and salt.
Gently fold in the whipped egg whites.
Heat a nonstick pan with butter, ladle batter, and fry pancakes until golden on both sides.
For the strawberry sauce, cook strawberries and sugar in a pan for 5 minutes until thickened.
Serve pancakes with strawberry sauce.
