– 1 cup basmati rice – 1 cup coconut milk – 1 cup water – 1 tbsp coconut oil – Salt to taste – Optional: Curry leaves, mustard seeds, cashews for garnish
Wash the rice under cold water until it runs clear to remove excess starch.
In a pan, combine coconut milk, water, and rice. Bring to a boil, reduce heat, and simmer covered until rice is tender and the liquid is absorbed.
Fry cashews, curry leaves, and mustard seeds in coconut oil. Add them to the rice for a rich flavor and crunchy texture.
Serve your coconut rice alongside curries, grilled fish, or enjoy it as a standalone meal!
