Mix 1 cup of suji, 1/4 cup of yogurt, 1/4 teaspoon of baking soda, & 1/2 teaspoon of salt. Add water gradually and mix to get a smooth, thick batter. Let it rest for 15 minutes.
Grease your idli molds with a little oil and set them in a steaming tray. Fill a large pot or steamer with water and bring it to a boil.
To make the idlis fluffy, you can add 1/2 teaspoon of Eno fruit salt into the batter. Gently mix it in.
Pour the batter into the greased idli molds, filling each mold about 3/4 full.
Place the tray into the steamer and steam the idlis for 10-12 minutes, or until they are soft and cooked.
Let the idlis cool for a minute, then gently remove them from the molds. Serve hot with coconut chutney and sambar.
