Flavorful African Fish Curry: A Spicy, Savory Delight To Savor

Soak tamarind in water for 10 minutes, then extract the juice. Season fish with salt and pepper.

Heat oil in a pan, sear fish on both sides, then remove and set aside.

In the same oil, cook onions until golden, then add ginger, garlic, tomatoes, and tomato puree.

Add curry leaves, spice powders, and a little water to prevent burning.

Stir in tamarind juice, salt, sugar, and coconut milk, bring to a boil.

Add fish back in, simmer for 10 minutes. 

Garnish with coriander, and serve with rice.
