- 1 cup pumpkin puree - 1 1/4 cups all-purpose flour - 1 cup milk - 2 tbsp brown sugar - 1 tsp cinnamon , baking powder - 1/2 tsp nutmeg , baking soda - 1/4 tsp salt - 1 large egg - 1 tbsp melted butter or oil
In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
In another bowl, mix the pumpkin puree, milk, egg, brown sugar, and melted butter until smooth.
Pour the wet ingredients into the dry ingredients, mixing until just combined. Don’t overmix for fluffy pancakes!
Heat a skillet over medium heat. Pour 1/4 cup batter per pancake, cook for 2-3 minutes per side, or until golden.
Top your pancakes with maple syrup, whipped cream, or a sprinkle of cinnamon. Enjoy the warm, cozy flavors!
