Sunny Priyan
200g paneer, 2 cups fresh spinach leaves, 1 onion,1 tomato, 1 tbsp ginger-garlic paste, 1 green chili, 1 tsp cumin seeds, 1/2 tsp turmeric powder, 1 tsp garam masala, 1/2 tsp red chili powder, 1/2 cup cream, Salt to taste.
Boil 2 cups of fresh spinach leaves for 30 seconds, then transfer them to an ice bath to stop cooking. Once cooled, blend the spinach into a smooth puree.
Heat 1 tbsp oil or ghee in a pan. Add cumin seeds, chopped onions, ginger-garlic paste, and green chili. Cook until onions are golden.
Add chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until tomatoes soften and the oil starts to separate.
Stir in the spinach puree, add paneer cubes, cream or yogurt for a rich texture. Cook for 5-7 minutes.
Garnish with a dollop of cream or fresh cilantro. Serve hot with naan or rice. Enjoy your creamy, flavourful Palak Paneer!
