Easy & Fresh Creamy Corn Salad For Any Occasion

Ingredients Needed

Corn (2 cups fresh or canned) Cucumber (1 cup, diced) Red Bell Pepper (1/2 cup, diced) Red Onion (1/4 cup, finely chopped) Fresh Cilantro (optional, for garnish)

Dressing Ingredients

Mayonnaise or Greek Yogurt (1/2 cup for a creamy texture) Lime Juice (1 tbsp, for a tangy kick) Salt and Black Pepper (to taste) – Optional: Paprika or Chili Powder (1/4 tsp for spice)

Prepare The Corn

If using fresh corn, boil or grill until tender, then cool and remove kernels.

Mix Vegetables

Combine corn, cucumber, bell pepper, red onion, and cilantro in a large bowl.

Whisk The Dressing

In a small bowl, mix mayonnaise, lime juice, salt, pepper, and optional paprika.
