– Corn (2 cups fresh or canned) – Cucumber (1 cup, diced) – Red Bell Pepper (1/2 cup, diced) – Red Onion (1/4 cup, finely chopped) – Fresh Cilantro (optional, for garnish)
– Mayonnaise or Greek Yogurt (1/2 cup for a creamy texture) – Lime Juice (1 tbsp, for a tangy kick) – Salt and Black Pepper (to taste) – Optional: Paprika or Chili Powder (1/4 tsp for spice)
If using fresh corn, boil or grill until tender, then cool and remove kernels.
Combine corn, cucumber, bell pepper, red onion, and cilantro in a large bowl.
In a small bowl, mix mayonnaise, lime juice, salt, pepper, and optional paprika.
Pour dressing over the vegetables, mix well, and chill for 10-15 minutes to let flavors meld.
Serve chilled with an extra garnish of cilantro or lime wedges if desired. Perfect for picnics or BBQs!
