Take some oil,450/1lb paneer, 1 large onion, 2 tsp cumin seeds, 2 garlic cloves,1 small piece ginger, 1½ tsp crushed dried chillies, coriander, 1 black cardamom, 4 green cardamom, 2 cloves, 1 star anise,1 tsp ground turmeric, 1½ tsp garam masala, 300g passata, 250g frozen peas,salt and freshly ground black pepper.
Heat some vegetable oil in a pan and add the paneer cubes to shallow fry it until golden brown.
Add a tbsp of oil and fry the onion,cumin seeds, garlic, ginger, chillies,passata and coriander stalks over medium heat. Read
Add the cardamom pods, cloves, star anise, turmeric and garam masala.
Season well with salt and continue to cook for a couple of minutes until the spices are aromatic.
Add in the matar and mix everything well until cooked.
Add a generous splash of water and sstir in the peas and coriander leaves.
Serve it with rice or roti and enjoy!
