– 1 ½ cups mixed dried fruits – 1 cup all-purpose flour – ½ cup butter – ½ cup sugar – 2 eggs – 1 tsp baking powder – 1 tsp cinnamon – ½ tsp nutmeg – 1 tsp vanilla extract – ¼ cup milk
Soak the mixed dried fruits in warm water (or orange juice) for 30 min.utes to plump them up and enhance their flavor
Cream butter and sugar together until light and fluffy. Add eggs, vanilla extract, and mix well. Fold in the flour, baking powder, and spices.
Drain the soaked fruits and gently fold them into the batter, mixing evenly to distribute them throughout the cake.
Pour the batter into a greased cake pan and bake at 160°C (320°F) for 60–75 minutes, or until a toothpick comes out clean.
Once the cake is baked, let it cool completely before slicing. Your delicious fruit cake is ready to be enjoyed with a cup of tea or as a festive dessert!
