Ingredients needed – 2 medium-sized beetroots, 1/2 cup Greek yogurt, 1 tbsp olive oil, 1 tbsp lemon juice, 1 garlic clove, Salt and pepper to taste, Fresh herbs (optional for garnish: parsley, mint, or dill).
Start by boiling 2 medium-sized beetroots until they are tender (around 40 minutes).
Once cooled, peel off the beetroot skin.
Then chop them into small pieces for easy blending.
In a food processor, add the boiled beets, Greek yogurt, olive oil, lemon juice, garlic, salt, and pepper. Blend until smooth and creamy!
Transfer the dip to a bowl. Garnish with fresh herbs like parsley, dill, or mint. Your beetroot dip is ready to enjoy!
