Take 100g unsalted butter, 250g caster, 50ml sunflower oil, 25g cornflour, 2 tsp vanilla extract, 4 eggs, 80ml milk, 100ml double cream, 300g plain flour, 3 tsp baking powder.
Preheat the oven to 180 degrees and grease the cake tin with baking parchment paper.
Melt butter on a low heat pan, pour it into a bowl with the sugar, oil, cornflour and vanilla essence then whisk in the eggs followed by the milk and cream.
In the next step beat the flour and baking powder into the cupcake batter.
Spoon the mixture into cupcake papers then bake for 12-15 minutes.
Remove the cupcakes from the oven and set aside to cool.
Top it up with some vanilla frosting along with rainbow sprinkles and enjoy!
