Mix thyme, cumin, salt, and pepper, season chicken on both sides with half.
Heat 1 tablespoon oil in a skillet and brown chicken, 2-3 minutes per side, set aside.
Add remaining oil and onion to the pan, and cook until softened, 2-4 minutes.
Stir in couscous and garlic, toast for 1-2 minutes.
Add kale and remaining spices, cook until kale wilts, 1-2 minutes.
Pour in broth, add chicken back, cover, and cook until chicken is done and couscous is tender, 10-12 minutes.
