- 1 cucumber, thinly sliced - 8 slices of bread (white or whole wheat) - 4 tbsp cream cheese or butter - 1/2 tsp fresh dill or parsley, chopped - Salt and pepper to taste
In a small bowl, mix the cream cheese with the chopped dill or parsley, adding a pinch of salt and pepper.
Spread a thin layer of the cream cheese mixture on each slice of bread. This adds flavor and helps hold the cucumbers in place.
Place the cucumber slices evenly over half of the bread slices. Season with a bit more salt if desired.
Place the remaining bread slices on top to form sandwiches. Press gently to secure.
Cut each sandwich into halves or quarters for easy serving. Enjoy your fresh cucumber sandwiches!
