Lingkan Reang
Blend all grinding ingredients into a puree, adding water as needed.
Marinate mutton with salt, turmeric, and lemon juice for 15 minutes.
Add the ground puree to the mutton and mix well.
Cook the mutton in a pressure cooker for 5-6 whistles, then let the pressure release naturally.
Heat coconut oil in a kadai, add curry leaves, and roast the mutton for 5 minutes.
Add gram dal powder, cook for 10 more minutes, then serve once the mutton is golden and roasted.
