Saute onion, carrots, and celery in butter until soft, add garlic and cook for 1 minute.
Sprinkle flour over veggies and stir for 1 minute to thicken.
Add evaporated milk and broth, bringing to a simmer, then add chicken, thyme, salt, and pepper.
Whisk dry ingredients in a bowl, then stir in butter and milk until dough forms.
Scoop dough into balls and drop into the simmering soup, pressing down lightly.
Cover pot, reduce heat to low, and simmer for 15 minutes.
Stir soup gently, check dumpling doneness, and serve once fully cooked. Enjoy!
