Boil a large pot of water and cook cabbage leaves for 1 minute. Drain, rinse with cold water, and pat dry.
Preheat oven to 350°F.
In a bowl, combine chicken, refried beans, and cheese.
Coat the bottom of a baking dish with enchilada sauce.
Fill each cabbage leaf with cup chicken mixture, roll into enchiladas, and place seam-side down in the dish.
Drizzle with remaining sauce, sprinkle with cheese, and bake for 20 minutes. Garnish with cilantro if desired.
