Preheat your oven to 350°F (175°C) and line a cupcake tray with paper liners.
In a bowl, whisk together flour, sugar, baking powder, and a pinch of salt.
In another bowl, mix milk, melted butter (or oil), egg, and vanilla extract until well combined.
Gradually add the wet mixture to the dry ingredients, stirring until just combined. Do not overmix.
Pour the batter into the lined cupcake tray, filling each cup about 2/3 full.
Bake for 10-12 minutes or until a toothpick inserted into the center comes out clean.
Let the cupcakes cool in the tray for a few minutes, then transfer them to a wire rack to cool completely. Enjoy plain or top with your favorite frosting!
