1 cup paneer, 1/2 cup yogurt, 1 tbsp lemon juice, 1 tsp garam masala, 1/2 tsp cumin powder, 1/4 tsp cayenne pepper, 8-10 tortillas, 2 cups shredded cheese, 1/4 cup chopped cilantro, salt & pepper.
In a bowl, mix together the yogurt, lemon juice, garam masala, cumin powder, and cayenne pepper . Add the paneer cubes and marinate for at least 30 minutes.
Heat ghee in a pan.
Heat a non-stick pan over medium heat and cook the marinated paneer until golden brown.
In a separate pan, melt 1 tablespoon of butter over medium heat. Place a tortilla in the pan and sprinkle shredded cheese on half of the tortilla. Add the cooked paneer on top of the cheese.
Fold the tortilla in half and cook until the cheese is melted and the tortilla is crispy. Flip the quesadilla and cook for another 2-3 minutes.
Add diced jalapenos/serrano peppers for heat, mix in chopped cilantro/scallions for extra flavor, or use different cheeses like feta/goat cheese.
Cut the quesadilla into wedges and serve with your favorite dipping sauce, such as salsa or raita.
