Vanilla beans, gelatin, heavy cream, whole milk, sugar, vanilla extract, salt.
Sprinkle gelatin over 3 tbsp of water in a bowl and let it bloom for 5 minutes.
In a saucepan, combine heavy cream, milk, sugar, and a pinch of salt. Heat over medium until warm (not boiling).
Split the vanilla bean and scrape the seeds into the mixture. Add the pod too for extra flavor.
Once the cream mixture is warm, add the bloomed gelatin and stir until fully dissolved.
Pour over biscuit base and return to the refrigerator for 1 hour or until set.
Once set, garnish with fresh berries or a drizzle of honey and serve chilled. Enjoy.
