Mix all-purpose flour, yogurt, and a pinch of turmeric for color. Let it ferment for 6-8 hours.
Boil sugar and water with saffron strands and cardamom until the syrup reaches a sticky consistency.
In a deep pan, heat oil or ghee for frying the jalebis to a crisp, golden perfection.
Transfer the batter into a piping bag and create spiral shapes directly into the hot oil.
Fry the jalebis on medium heat until they turn crispy and golden brown on both sides.
Immediately soak the fried jalebis in warm sugar syrup for 30 seconds, then remove and let them cool.
Garnish with slivers of pistachios or almonds and serve hot for a festive Navratri treat.
