Boil 2.5 cups of water in a saucepan, then add 1 cup of old-fashioned rolled oats.
Cook the oats on medium heat, stirring occasionally, until they become soft and tender.
Slightly mash the cooked oats with a spoon. Next, add 1 cup of whisked curd (yogurt), ½ cup of whole milk, and salt to taste, and mix.
Add ¼ cup grated carrot, ¼ cup chopped cucumber, 2 tablespoons coriander leaves and mix well. Keep it aside.
Heat 1 tsp oil in a pan. Add ½ tspn mustard seeds, urad dal, chana dal, 1 dried red chili and fry until they are light golden brown.
Add the 1 tspn grated ginger, 1 green chili, 1 stalk curry leaves, and 1 pinch of hing. Saute for a few seconds.
Pour the tempering over curd oats mixture and mix until well combined.
Serve curd yogurt oats chilled, and enjoy!
