Preheat oven to 425°F and bake potatoes on the rack for 1 hour.
Lower oven to 400°F and cut a slit in the tops of the baked potatoes.
Scoop out the flesh, leaving the shells intact, and mash it lightly.
Mix in butter, sour cream, cheese, salt, and pepper.
Refill the shells with the potato mixture and place on a baking sheet.
Bake for 15-20 minutes, top with remaining cheese, and bake until melted.
