Heat ghee in a kadai, add mustard, cumin, peanuts, sesame seeds, channa dal, cinnamon, cardamom, and dry red chili.
Fry for 1 minute until golden.
Add onions, green chilli, and salt, and fry for 1 minute.
Add grated carrots and stir fry for 5 minutes.
Add cooked rice and toss well.
Serve with a side dish or papad.
