Cut garlic chives into 2-inch pieces and thinly slice the onion.
In a bowl, mix pancake mix with 1 cup of icy cold water and soy sauce (or gochujang for spice).
Add garlic chives and onion to the batter and stir lightly.
Heat oil in a non-stick pan, ladle the batter, and cook until golden brown on both sides.
Press down the pancake with a spatula to ensure even cooking.
Repeat until all batter is used and serve with dipping sauce.
